Best Ever Eggnog Recipe

Food & Drink

Tis the season to be jolly, fa-la-la-la-la, lala-la-la…

Eggnog is a bit of a hit or miss drink. Some people love it and others won’t touch the stuff. There are so many different ways that people make this drink so it varies a lot, but I’m here to share with you a recipe I recently came across and tweaked and it. tastes. b-e-a-utiful!

I have adapted this recipe to suit my own personal tastes so feel free to use this as a guide and make it with your own twist!

8 medium eggs (separated)
150-200g sugar
600-700ml jersey cream (or use whole milk/half and half)
6 shots honey rum (rum, whiskey or brandy go best)
1/4 tsp vanilla extract
freshly grated nutmeg
ground cinnamon

Beat the egg yolks until pale yellow and thick.
Add in the sugar and vanilla extract and smooth until smooth.
Slowly mix in the cream/milk until a drinkable consistency.
Add the rum 1 shot at a time until you’re happy (add more if you like).
Add nutmeg and cinnamon to taste.

Just before serving, beat the egg whites until stiff and fold int the mixture for a delightful mousse-like drink. Or chill/freeze for a dessert.

I recommend serving this with a whipped cream topping and some chocolate shavings. You can make this a day in advance but leave the egg whites until serving time or the mixture won’t be as light and airy.

We used honey rum which adds a delicious sweetness so if you’re using normal rum/any other drink, you may need to add more sugar.

This is a delicious drink perfect for Christmas day and I hope you enjoy it as much as mum and I did when we drank the entire batch just for a ‘taster’ hehe.

Due to the raw eggs, this drink (with or without alcohol), is NOT suitable for pregnant women or small children.

What’s your go-to festive drink?
